Pineapple Sherbet by:Dippin’ Flavors
Made with coarse crushed pineapple, Neutral Sherbet Base and the addition of Citric Acid Solution to enhance the fruit flavor.
Total Preparation Time:10-18minutes
  1. In a suitable container, mix Neutral Sherbet Base with 20% of the water, stirring until completely dissolved.
  2. Add the sugar, 40% of the water and the ice cream mix, stirring well to dissolve the sugar.
  3. Pour this mixture into the freezer. Add the Pineapple Bits to the freezer.
  4. Rinse out the mixing container with the remaining 40% of the water and add this to the freezer also.
  5. Freeze the sherbet, adding the Citric Acid Solution to the freezer as the sherbet begins to freeze.
  6. Freeze to approximately 30% overrun.
